REWER A Roundhouse Christmas Story: Twas the week before Christmas, when all through Roundhouse. Many creatures were stirring in the taproom and brewhouse. The brew cellar fermenters were empty, they were bare, In hopes that more brewing grains soon would be there. The growlers were all prepped, to be filled with liquid bread, While visions of being emptied danced in their heads. With Dan crunching numbers and Mark making plans, To figure out how to get more beer into cans. When out in the yard there arose such a racket, We sprang to the patio, but since its always so damn cold here we had to first put on our jackets. Away to the windows and doors we fast flew, To see if there was anything we t e so brighdly on the power plant next door. Imade us forget about all the beer we spilled on the floor. No matter, our building is 150 yrs old, Cleaning that mess up would be easy, we were told. We wondered to out loud, "What could make such a noise?" "Could it be ajolly fat man carrying a giant bagof toys" No it wasan 18-wheeler delivering tons of malted grain. We now could brew more beer which was good, very little remained, With a cooler so bare, it was a frightful shock, We needed to brew soon, to build up merestock Chuck got right to work, he began unloading the stores, Of Crystal, and Amber and other malts galore: "Some Pale malt, some Caramel, some Crystal Chuck shouted, Some Chocolate, some Munich, these grains have been sprouted." He got straight to work, milling grains he had measured, To make us all brews we so heartfully treasured. Some hops he chose carefully so as to make the beer bitter, No time for rest now, no, Chuck's not a quitter. On into the mash tun, the process began Then on to become wort, the rich liquid then ran, Into the brew kettle and onto the boil Hop utilization's the key, to lupulin oil. Next into the fermenter the wort then Chuck drew, This sugar rich liquid, soon to become a fine brew. He pitches some yeast as the process begins, Of fermentation in our giant stainless steel bins The days go by slowly as you wait for the S.G.(that's specific gravity) To get to a level where we can set the beer free, Into kegs or cans and into customers homes Our C & L buddies work as tireless gnomes. Roundhouse Brewery is saved, we've more beer to sell! During these long winter nights, rest assured, all is well Holly makes up a plan, schedules entertainment and food, And events and donations and sponsorships and parties and posters and social media and the website, and clothing and menus and taproom décor and staff scheduling and office supplies and....you get the picture. Christine pours a pint, Kelson shares a story, Tyler talks about beer, Jeff cleans up something gory, Jana serves with a smile, Deb keeps herself busy, Mary works fast in circles, making everyone dizzy. Bobbi checks off a list of the things she has done, This Roundhouse Choo-Choo crew, believe me, is second to none! So raise a glass or a can to your loved ones and friends, Show them love, patience and kindness, the kind that never ends. This Christmas make special in your own kind of way. But know it's made better, with kind things to say. Christ was born unto us to be our guiding light, So we here at Roundhouse would like to say.. MERRY CHRISTMAS TO ALL, AND TO ALL A GOOD-NIGHT
